Filling:
- 1 large egg, beaten
- 1 cup fresh blackberries
- 2 cups fresh raspberries
- 1 1/2 cups fresh blueberries
- 1/2 cup sugar
- 3 tablespoons cornstarch
- 2 tablespoons unsalted butter, chopped
- Prepare the Pie Crust: Place the first pie crust in the bottom of the pie plate and brush with half of the beaten egg.
- Prepare the Filling: Combine the blackberries, raspberries, blueberries, sugar, and cornstarch until well coated. Pour the mixture into the pie crust and top with chopped butter.
- Assemble the Pie: Cover with the second pie crust, trim any excess dough, and brush with the remaining beaten egg.
- Bake: Preheat the oven to 425°F. Bake the pie for 15 minutes with the edges covered in foil. Then reduce the temperature to 375°F, remove the foil, and bake for an additional 30 minutes or until the crust is golden brown.
- Cool: Allow the pie to cool completely before serving.
