Ingredients

Scale

Miso Butter Salmon

  • 2 filets of salmon (about 11.5 lbs)
  • 1 tbsp white miso paste
  • 2 tbsp butter, room temperature
  • Black pepper, to taste

Sizzled Scallion Salsa Verde

  • 2 large scallions, finely chopped
  • 1 shallot, sliced
  • 4 cloves garlic, minced
  • 1/2 tsp Aleppo or crushed red pepper
  • 1/4 cup olive oil
  • 2 tbsp roughly chopped cilantro
  • 1 tbsp red wine vinegar
  • Juice of 1/2 lemon

Instructions

  1. Prepare the Miso Butter: In a small bowl, mash together the white miso paste and room temperature butter with a fork until smooth and well combined. This mixture will create a flavorful glaze for the salmon.
  2. Bake the Salmon: Preheat the oven to 400°F (200°C). Place the salmon filets on a baking sheet skin-side down. Spread the miso butter evenly over the top of each filet. Season lightly with black pepper. Bake for 15 minutes or until the salmon is flaky and cooked through.
  3. Make the Salsa Verde Ingredients: While the salmon bakes, combine the finely chopped scallions, sliced shallot, minced garlic, and Aleppo or crushed red pepper in a medium bowl.
  4. Heat and Pour Olive Oil: Heat the olive oil in a pan over medium heat until it becomes hot but does not smoke. Immediately pour the hot oil over the scallion mixture in the bowl. Stir to combine and let it sit for about 10 minutes to allow flavors to meld.
  5. Add Fresh Herbs and Acid: After sitting, mix in the roughly chopped cilantro, red wine vinegar, and lemon juice. Stir thoroughly to create a bright and tangy salsa verde.
  6. Serve: When the salmon is done, serve it over cooked rice or fresh greens. Spoon the sizzled scallion salsa verde generously over the top and enjoy the combination of rich, savory salmon with the fresh, zesty salsa.

Notes

  • You can substitute the white miso paste with yellow miso for a slightly stronger flavor.
  • The salsa verde can be prepared ahead of time and stored in the refrigerator for up to 2 days.
  • Serve with steamed rice, quinoa, or your favorite salad greens to complete the meal.
  • If Aleppo pepper is unavailable, use crushed red pepper flakes but use sparingly to adjust for heat preference.
  • Make sure to use room temperature butter to ensure it blends smoothly with the miso.
