Ingredients

Scale

For the Dough

  • 300 g strong white bread flour
  • 1 tsp fast-action dried yeast
  • 1 tsp white caster sugar (superfine sugar)
  • 1 tsp salt
  • 200 ml lukewarm water (approximately)

For the Topping

  • 250 g pizza sauce
  • 150 g grated/shredded mozzarella cheese
  • 120 g pitted black olives

Instructions

  1. Make the dough: In a bowl, combine the flour, yeast, sugar, and salt. Pour in two-thirds of the lukewarm water and mix with a wooden spoon or your hand. Gradually add the remaining water as needed to absorb any dry patches, ensuring the dough comes together smoothly.
  2. Knead the dough: Turn the dough out onto a floured surface and knead it for a few minutes until it becomes smooth and elastic. Return it to the bowl, cover with a wet tea towel or cling film, and let it rise for one hour until doubled in size.
  3. Preheat the oven: Set your oven to 220°C (200°C fan, 430°F) to get it ready for baking the pizzas.
  4. Shape the dough: Tip the risen dough onto a lightly floured surface and knead briefly to remove large air bubbles. Divide the dough into 20 equal balls, place them on lined baking trays, lightly flour your hand, and flatten each ball with your palm to form mini pizza bases.
  5. Add sauce and cheese: Spoon a heaped teaspoonful of tomato sauce onto the center of each pizza base, spreading slightly. Sprinkle each with a generous amount of grated mozzarella.
  6. Create the spider bodies: Slice 15 olives lengthways and place one slice on each pizza as the spider’s abdomen. Then, slice 15 olives crosswise to create round shapes and place one at one end of each abdomen to serve as the spider’s head.
  7. Make the spider legs: Take another olive, slice it lengthwise in half, then cut each half into 4 long thin slivers. Arrange eight legs around the spider body on each pizza, with four legs curving upwards and four curving downwards for a realistic spider effect.
  8. Bake the pizzas: Place the trays in the preheated oven and bake for 5-7 minutes, or until the dough is cooked through and just starting to turn golden.

Notes

  • Ensure the water used for the dough is lukewarm, about 38°C, to properly activate the yeast.
  • If olives are large, adjust the slicing accordingly to make recognizable spider parts.
  • These mini pizzas are best served fresh and warm for the best taste and texture.
  • You can experiment with toppings but black olives are key to achieving the spider look.
  • Use a fan oven setting if available for even baking.
