Ingredients

Scale

Prosciutto and Herb Mixture

  • 3 oz. prosciutto
  • 1 tbsp. fresh thyme

Phyllo Shells and Fillings

  • 2 packages (1.9 oz. each) Athens Phyllo Shells
  • 8 oz. triple creme brie cheese wheel, chilled in freezer for 1520 minutes
  • 8.5 oz. jar fig jam

Instructions

  1. Preheat and Bake Prosciutto: Preheat your oven to 400°F. Line a baking sheet with parchment paper and arrange the prosciutto in small nests. Bake for 10-12 minutes, or until the prosciutto turns crispy and slightly browned.
  2. Prepare Prosciutto Mixture: Carefully remove the baked prosciutto from the oven and allow it to cool. Chop it into small pieces. Toss these chopped pieces with fresh thyme and set aside for garnishing.
  3. Lower Oven Temperature: Reduce the oven temperature to 325°F to prepare for baking the brie bites.
  4. Prep Brie Cheese: Remove the brie wheel from the freezer. Slice it into small cubes; chilling the brie beforehand makes slicing easier and cleaner.
  5. Arrange Phyllo Shells: Line another baking sheet with parchment paper and place the Athens Phyllo Shells evenly spaced on the sheet.
  6. Add Fig Jam: Spoon approximately 1 teaspoon of fig jam inside each phyllo shell, distributing evenly.
  7. Add Brie Cubes: Place a cube of the chilled brie cheese atop the fig jam in each phyllo shell.
  8. Bake Brie Bites: Bake the filled shells at 325°F for 6-8 minutes, or until the brie is melted and bubbly.
  9. Garnish and Serve: Remove the bites from the oven and immediately top each with the prosciutto and thyme mixture. Serve warm and enjoy these delicious mini appetizers!

Notes

  • Freezing the brie cheese before slicing helps achieve uniform cubes and prevents sticking.
  • Use parchment paper to prevent sticking and for easy cleanup.
  • Prosciutto crisps up nicely when baked; watch carefully to avoid burning.
  • For variation, try substituting fig jam with another flavorful fruit preserve like apricot or raspberry.
  • Serve these bites warm for the best melt-in-your-mouth experience.
  • Can be prepared ahead by baking the prosciutto and chopping the thyme mixture; assemble and bake just before serving.
