Chocolate Sponge:

  • 110g self-raising flour
  • 1/4 tsp baking powder
  • 30g cocoa powder
  • 15g cornflour (cornstarch)
  • 90g caster sugar
  • 1/8 tsp salt
  • 165ml full-fat milk, room temperature
  • 1 tsp distilled white vinegar or apple cider vinegar
  • 1 tsp vanilla extract
  • 35ml any flavorless oil

Espresso Mixture:

  • 20g instant espresso powder
  • 450ml hot water (not boiling)
  • Optional: Substitute 150ml water with dark rum, whiskey, or Irish cream liqueur

Shortbread Layer:

  • 100g shortbread biscuits, crushed

Mascarpone Cream:

  • 250g full-fat mascarpone, room temperature
  • 600ml double cream, room temperature
  • 3 tbsp icing sugar (confectioner’s sugar)

Caramel Layer:

  • 225g caramel (dulce de leche)
  • 1 tsp fleur de sel (or any flaky sea salt)

Finishing Touch:

  • 2 tbsp cocoa powder (for dusting)

Instructions

  1. Chocolate Sponge: Preheat the oven, prepare tin, mix wet ingredients, sift dry ingredients, combine, bake, and cool.
  2. Espresso Mixture: Mix instant espresso, hot water, and liqueur.
  3. Shortbread Layer: Crush biscuits into coarse crumbs.
  4. Mascarpone Cream: Beat mascarpone, cream, and sugar until smooth.
  5. Assembly: Soak sponge in espresso, layer sponge, mascarpone cream, biscuits, and caramel. Repeat and finish with caramel. Dust with cocoa powder.

Notes

  • You can adjust the sweetness by adding more or less icing sugar to the mascarpone cream.
  • For a stronger coffee flavor, increase the amount of espresso powder in the mixture.
  • Allow the Tiramisu to chill in the refrigerator for a few hours before serving for best results.
