A flavorful and easy-to-make Mexican Lasagna that combines classic taco ingredients with layers of corn tortillas and cheese, baked to perfection. This dish is a crowd-pleaser and perfect for gatherings or weeknight dinners.

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 2 teaspoons minced garlic (2 cloves)
  • 1/4 cup taco seasoning (2 packets)
  • 1/2 cup water
  • 14.5 ounce fire-roasted diced tomatoes, not drained
  • 4 ounce can of green chiles
  • 15 ounce can of black beans, drained and rinsed

Layering:

  • 18 corn tortillas
  • 6 cups shredded jack and cheddar cheese

Garnish:

  • 1 medium tomato, diced
  • 1 bunch green onions, sliced
  • Sour cream for serving

Instructions

  1. Preheat Oven: Preheat the oven to 350°F. Grease a 9×13 casserole dish with non-stick spray.
  2. Cook Beef Mixture: In a skillet, cook ground beef and onion until beef is browned. Add garlic and sauté. Stir in taco seasoning and water.
  3. Add Ingredients: Mix in tomatoes, green chiles, and black beans. Heat through.
  4. Layering: Place 6 corn tortillas in the dish, top with 1/3 of the meat mixture and 2 cups of cheese. Repeat layers twice.
  5. Bake: Cover with foil and bake for 30-40 minutes until bubbly and cheese melts.
  6. Garnish and Serve: Top with tomatoes and green onions. Let it rest for 10 minutes before slicing. Serve with sour cream.
