Ground Beef Mixture:
- 1 pound ground beef
- 1 medium yellow onion, diced
- 2 teaspoons minced garlic (2 cloves)
- 1/4 cup taco seasoning (2 packets)
- 1/2 cup water
- 14.5 ounce fire-roasted diced tomatoes, not drained
- 4 ounce can of green chiles
- 15 ounce can of black beans, drained and rinsed
Layering:
- 18 corn tortillas
- 6 cups shredded jack and cheddar cheese
Garnish:
- 1 medium tomato, diced
- 1 bunch green onions, sliced
- Sour cream for serving
- Preheat Oven: Preheat the oven to 350°F. Grease a 9×13 casserole dish with non-stick spray.
- Cook Beef Mixture: In a skillet, cook ground beef and onion until beef is browned. Add garlic and sauté. Stir in taco seasoning and water.
- Add Ingredients: Mix in tomatoes, green chiles, and black beans. Heat through.
- Layering: Place 6 corn tortillas in the dish, top with 1/3 of the meat mixture and 2 cups of cheese. Repeat layers twice.
- Bake: Cover with foil and bake for 30-40 minutes until bubbly and cheese melts.
- Garnish and Serve: Top with tomatoes and green onions. Let it rest for 10 minutes before slicing. Serve with sour cream.
