Ingredients

Olive Oil:

Garlic Cloves (sliced):

4 cloves

Fresh Thyme:

6 sprigs

Baby Tomatoes (whole):

1 1/2 cups

Haddock Fillets:

4 pieces

Salt and Pepper:

1/4 teaspoon each

Chilli Flakes (optional):

1/2 teaspoon

Mezzetta Olives:

1 cup, variety of your choice

Mezzetta Sliced Jalapeños:

1/4 cup

Mezzetta Capers (drained):

2 teaspoons

Instructions

  1. Preheat the oven: Preheat the oven to 450 degrees F.
  2. Preheat the baking dish: Place the baking dish with the olive oil in the oven to preheat for 6-8 minutes.
  3. Season the fish: Season the fish fillets with salt, pepper, and chilli flakes.
  4. Add ingredients to the pan: Once the pan is preheated, add garlic slices, half of the thyme sprigs, tomatoes, fish fillets, and Mezzetta olives.
  5. Top with jalapeños and capers: Add Mezzetta sliced jalapeños and capers on top of the fish.
  6. Bake the fish: Lower the oven temperature to 375 degrees and bake the fish for 15-18 minutes.
  7. Broil for a charred look: For a charred appearance, broil the fish for 2 minutes after baking for 15 minutes.
  8. Drizzle with olive oil: Once cooked, drizzle the flavorful olive oil from the pan over the fish.
