For the Chicken:
- 2 tbsp olive oil
- 2 chicken breasts
- 50g all-purpose flour
For the Broth:
- 3 garlic cloves (minced)
- 8 sun-dried tomatoes (sliced)
- 1/2 tbsp smoked paprika
- 1/2 tbsp oregano
- 1/2 tbsp chilli flakes
- 600ml chicken stock
- 300ml single cream
- 2 tbsp grated Parmesan (plus extra for garnish)
- 1/2 tsp ground pepper
- 1/2 tsp flaky salt
- 1/2 tsp sugar
For Serving:
- 200g ramen noodles
- Coriander
- Beansprouts
- Edamame beans
- Spring onion
- Chilli oil
- Coat and Cook the Chicken: Coat chicken breasts in flour and fry in olive oil until golden. Set aside.
- Prepare the Broth: In the same pan, sauté garlic, sun-dried tomatoes, and spices. Add chicken stock, cream, and Parmesan. Return chicken to the pan and simmer.
- Season and Cook Noodles: Season the broth, add more stock, and cook ramen noodles until done.
- Assemble: Divide noodles and broth into bowls. Top with sliced chicken, coriander, beansprouts, edamame, spring onions, and chilli oil.
