Ingredients

Scale

Beans

  • 2 (15-ounce) cans white beans, drained and rinsed

Marinade

  • ½ cup chopped fresh herbs (parsley, cilantro, basil, dill, tarragon, mint, etc.)
  • 2 roasted red peppers, finely diced
  • ⅓ cup finely diced shallot
  • 2 garlic cloves, minced
  • ½ cup extra-virgin olive oil
  • 1 lemon, zested and juiced (about 3 tablespoons juice and 1 teaspoon zest)
  • ½ teaspoon kosher salt
  • ¼ teaspoon red pepper flakes
  • Ground black pepper, to taste

Instructions

  1. Combine Ingredients: In a large mixing bowl, stir together the drained and rinsed white beans, chopped fresh herbs, finely diced roasted red peppers, diced shallot, minced garlic, extra-virgin olive oil, lemon zest, lemon juice, kosher salt, red pepper flakes, and ground black pepper until well incorporated.
  2. Marinate: Cover the bowl tightly with plastic wrap or a lid and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to meld thoroughly. Before serving, give the salad a good stir to redistribute the marinade. Store any leftovers in a sealed container in the fridge.

Notes

  • For a deeper flavor, marinate the beans overnight.
  • Use a variety of fresh herbs according to your preference for a unique taste each time.
  • Roast your own red peppers or use jarred roasted red peppers for convenience.
  • This dish is perfect served chilled or at room temperature.
  • Pairs well with grilled meats, crusty bread, or as a light vegetarian main.
