These Lemon Truffles are a delightful treat that combines the zesty freshness of lemon with the sweetness of white chocolate. Creamy and tangy, these truffles are perfect for any occasion.

Cream Cheese Mixture:

  • 4 oz cream cheese (or coconut butter)
  • 2 tbsp butter (or additional coconut butter)
  • 3 tbsp powdered sugar (or erythritol)
  • zest of one lemon

Optional:

  • 3 oz white chocolate chips
  • 1 drop natural food coloring (or pinch turmeric for color)

Instructions

  1. Prepare Cream Cheese Mixture: Bring the cream cheese and butter to room temperature if needed. Blend all ingredients, excluding optional white chocolate, until smooth.
  2. Form Truffle Balls: Using a hand mixer or fork, mix until well combined. Scoop mixture into balls using a mini cookie scoop and place on a parchment-lined plate. Freeze until firm.
  3. Optional White Chocolate Coating: Melt white chocolate and dip truffle balls for a decadent finish. Refrigerate or freeze for freshness.

Notes

  • For a smoother coating, add a little oil to the melted white chocolate.
