  • 1 cup (100 g) ground almonds (almond flour)
  • 1 tbsp lemon juice (use only if the dough is a bit dry)
  • 1 tsp vegetable oil (for greasing the bowl)

  • 1 cup (120 g) powdered sugar (icing sugar)
  • 1 tbsp lemon juice (or to taste)
  • 1 tsp vanilla extract
  • 1 tsp rum (optional)

Instructions

  1. Prepare the honey and sugar mixture: Measure the honey and dark brown sugar into a mixing bowl and microwave in 30-second bursts, stirring vigorously between bursts, until the sugar dissolves completely.
  2. Add butter and zest: Add the cubed unsalted butter, orange zest, and lemon zest to the warm honey mixture and stir until the butter fully melts, creating a smooth syrup.
  3. Mix in leavening and spices: Stir in the baking powder, baking soda, fine sea salt, ground cinnamon, allspice, ginger, cloves, nutmeg, white pepper (if using), and beaten egg until fully combined.
  4. Add dry ingredients: Gradually incorporate the all-purpose flour and ground almonds into the wet mixture, mixing until a soft, slightly sticky dough forms. If the dough feels dry, add up to 1 tablespoon of lemon juice as needed.
