Instructions

  1. Macerate Strawberries: In a small bowl, combine the ¾ cup of finely diced strawberries with 1 tablespoon of sugar. Stir well to coat the strawberries and allow them to sit aside, drawing out their natural juices and softening the fruit for about 10 minutes.
  2. Prepare Strawberry Syrup: In a pan, add the remaining 2 cups of diced strawberries, 3 tablespoons of sugar, and a large squeeze of lemon or lime juice. Heat the mixture, bringing it to a boil and then reducing to just above a simmer. Stir frequently and cook for about 10 minutes until the strawberries break down and the mixture becomes syrupy.
  3. Cool the Syrup: Remove the syrup from heat and place it in the refrigerator to cool completely. Cooling helps thicken the syrup and enhances its flavor.
  4. Assemble the Drink: In a glass, add 2 to 3 tablespoons of the chilled strawberry syrup, then pour in ¾ cup of unsweetened non-dairy milk. Add ice to your liking. Top the drink with about 1 tablespoon of the macerated strawberries. Stir gently to combine all the flavors.
