Ingredients

Scale

Vegetables

  • 16 ounces broccoli, coarsely chopped
  • 4 cloves garlic, minced

Dairy

  • 2 tbsp butter, divided
  • 3/4 cup heavy whipping cream
  • 1 1/3 cups shredded mozzarella, divided
  • 1/3 cup grated parmesan cheese

Protein

  • 1 1/2 lb cooked, chopped chicken (about 4 cups)

Seasoning

  • Salt and pepper, to taste

Instructions

  1. Sauté Broccoli: Set a 10-inch ovenproof skillet over medium heat and add 1 tablespoon of the butter. Once melted, add the broccoli and sauté until bright green and just tender, about 4 minutes. Remove the broccoli to a bowl.
  2. Cook Garlic and Cream: Melt the remaining butter in the pan and add the minced garlic, cooking until fragrant, about 1 minute. Add the heavy whipping cream and bring to a simmer, then cook until the cream is reduced and thickened, approximately 3 to 5 minutes.
  3. Add Cheeses and Season: Stir in 1/3 cup of the shredded mozzarella and all of the grated Parmesan cheese until melted. Season the sauce with salt and pepper to your taste.
  4. Combine Ingredients: Stir the sautéed broccoli and chopped cooked chicken into the creamy cheese sauce. Evenly top the mixture with the remaining 1 cup of mozzarella cheese.
  5. Broil to Brown: Preheat the broiler on your oven. Position the skillet about 6 inches from the heat source and broil until the mozzarella cheese is bubbly and beginning to brown, about 2 to 5 minutes depending on your broiler’s intensity. Watch carefully to prevent burning.

Notes

  • Use cooked chicken from leftovers or rotisserie chicken for convenience.
  • Broccoli can be substituted with cauliflower for variation.
  • Adjust seasoning with salt and pepper as needed after broiling, since cheese adds saltiness.
  • If your skillet is not ovenproof, transfer the mixture to a baking dish before broiling.
  • Watch the broiler closely as cheese can burn quickly.
