Ingredients

Scale

Salmon and Marinade

  • 4 salmon filets (46 ounces each)
  • 3 tablespoons low sodium soy sauce or tamari
  • 2 tablespoons honey
  • 2 tablespoons sriracha
  • 2 teaspoons minced garlic
  • 3 tablespoons water

Bowl Components

  • 2 cups cooked white rice
  • 1 avocado, sliced
  • 1 cucumber, sliced
  • 1 cup cooked edamame
  • 1/2 cup sriracha mayo
  • Red pepper flakes, for garnish
  • Sesame seeds, for garnish

Instructions

  1. Cut salmon: Cut your salmon into 1 inch cubes. You can choose to remove the skin or keep it on according to your preference.
  2. Whisk marinade: In a large bowl, whisk together the soy sauce (or tamari), honey, sriracha, minced garlic, and water to create the marinade.
  3. Marinate salmon: Add the cubed salmon into the marinade and gently toss to coat. Let it marinate for at least 20 minutes, or up to 1 hour for more flavor.
  4. Heat pan: Heat a large skillet over medium-high heat with a splash of oil to prevent sticking and ensure the salmon crisps nicely.
  5. Cook salmon: Remove the salmon from the marinade (reserve the marinade), and cook the salmon cubes for 2-3 minutes on each side until they develop a nice crisp exterior.
  6. Add sauce: Pour the reserved marinade into the skillet with the salmon and cook until the sauce thickens and coats the salmon, about 2-3 minutes more.
  7. Assemble bowls: Lay a bed of cooked white rice in each bowl. Top with the cooked salmon, sliced avocado, cucumber, and cooked edamame.
  8. Garnish and serve: Drizzle sriracha mayo over the bowls, then sprinkle with red pepper flakes and sesame seeds to taste. Serve immediately and enjoy!

Notes

  • For a spicier dish, add more sriracha to the marinade or drizzle extra sriracha mayo.
  • You can substitute white rice with brown rice or quinoa for a healthier option.
  • If you prefer skin-on salmon, cook skin side down first for a crispier texture.
  • Marinate the salmon no longer than 1 hour to maintain the best texture.
  • Prepare all bowl components ahead of time for quick assembly.
