  • ¼ tsp salt
  • Cracked black pepper, to taste
  • ¼ cup goat cheese, crumbled (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Prepare Carrots: Slice both ends off the carrots. Cut carrots diagonally into roughly 1½ inch pieces, slicing larger pieces in half lengthwise if needed. Place the cut carrots in a large mixing bowl.
  3. Make Glaze and Toss: Whisk together 1 tablespoon balsamic vinegar, 1 tablespoon honey, and the avocado oil. Pour over the carrots in the bowl. Add minced garlic, dried thyme, salt, and cracked black pepper, then toss to coat the carrots evenly.
  4. Arrange on Baking Sheet: Using a slotted spoon, transfer the coated carrots onto the prepared baking sheet in a single layer. Reserve the remaining glaze in the bowl for later use.
  5. Roast Carrots: Place the baking sheet in the oven and roast for 20-25 minutes until tender, stirring halfway through. During the last 5-10 minutes of roasting, brush the reserved glaze over the carrots to enhance flavor and caramelization.
  6. Prepare Finishing Drizzle: While carrots roast, combine the remaining 1 tablespoon balsamic vinegar and 1 tablespoon honey. Once the carrots are done, drizzle this mixture over them for a fresh, sweet-tart finish.
  7. Season and Serve: Taste the carrots and adjust salt and pepper if needed. Toss well and serve immediately, topped with crumbled goat cheese if desired for a creamy contrast.
