Ganache Center
- 28 whole roasted hazelnuts
- 2 ounces dark chocolate, chopped
- 1 tablespoon heavy cream
- ½ tablespoon salted butter
- ¼ cup homemade Nutella

Chocolate Coating
- 10 ounces dark chocolate, chopped
- ½ cup finely chopped roasted hazelnuts
- Prepare the Ganache: In a heatproof bowl, combine the chopped dark chocolate, heavy cream, and salted butter. Microwave for 30 seconds, stir well, then microwave another 30 seconds until melted. Whisk until smooth, stir in ¼ cup homemade Nutella, cover bowl, and refrigerate until firm, about 1 hour or chill in the freezer to speed up.
- Form Ganache Balls: Scoop 1 teaspoon of the ganache, press a whole roasted hazelnut into the center, and roll into a ball. Place on a parchment-lined baking sheet. Repeat to make 28 truffles. Freeze for 15-30 minutes until firm while preparing coating.
- Make Cookie Coating: In a medium bowl, stir together finely chopped chocolate wafer cookies, finely chopped roasted hazelnuts, and ⅔ cup homemade Nutella until well combined.
- Coat Ganache Balls: Scoop about ½ tablespoon or a heaping teaspoon of the cookie coating mixture, wrap it evenly around each ganache center ball, rolling between your hands to form smooth balls. Return to parchment paper and freeze for 1 hour to firm up. Skipping freezing may cause messiness.
- Melt Chocolate for Final Coating: Place 10 ounces chopped dark chocolate into a heat-safe bowl. Microwave in 30 second intervals, stirring well between each, until smooth and fully melted. Stir in ½ cup finely chopped roasted hazelnuts.
- Dip and Finish the Truffles: Using two forks, dip each cookie-coated truffle thoroughly into the melted chocolate until fully coated. Allow excess chocolate to drip off, then place back on parchment paper. Let chocolate firm up at room temperature or refrigerate. Optionally, wrap finished Ferrero Rocher in foil for storage.
