  • 1/2 cup refried beans (120g)
  • 3/4 cup Greek yogurt (170g)
  • 1 Tbsp taco seasoning
  • 3 cups shredded chicken (280g)
  • 1.5 cups shredded Mexican cheese (168g, divided)
  • 10 oz. can red enchilada sauce
  • 8 flour tortillas (8-inch, high-fiber)

Instructions

  1. Preheat the oven: Preheat the oven to 375 degrees F. Spray a 9×13-inch baking dish with nonstick cooking spray and set aside.
  2. Mix the filling: In a medium bowl, combine the yogurt, refried beans, and taco seasoning. Add the chicken and 1/2 cup of cheese, mix well.
  3. Fill the tortillas: Evenly distribute the mixture onto the tortillas (~1/3 cup or 80g each).
  4. Roll and assemble: Roll up each tortilla and place them in the baking dish.
  5. Add sauce and cheese: Pour enchilada sauce over the rolled tortillas and sprinkle with the remaining cheese.
  6. Bake: Bake for 15-20 minutes until the cheese is melted and bubbly. Top with fresh cilantro before serving.
