Greek Salsa

  • 1/2 cucumber, diced
  • 1/4 red onion, diced
  • 1/4 cup kalamata olives, sliced
  • Salt and pepper to taste
  • Juice of half a lemon
  • 2 tsp fresh dill, chopped
  • 1 tbsp fresh parsley, chopped

Coconut Tzatziki

  • 1 cup coconut yogurt (such as Culina)
  • 3 tbsp cucumber, diced
  • 2 tsp fresh dill
  • 1 tsp garlic powder
  • Pinch of salt
  • Juice of 1/4 lemon

Seasoned Ground Chicken

  • 2 tsp olive oil
  • 1 lb ground chicken
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dill
  • 1 tbsp parsley
  • Juice of 1/2 lemon
  • Salt and pepper to taste (omit pepper for AIP)

To Serve

  • Rice or cauliflower rice

Instructions

  1. Prepare the Greek Salsa: Combine the diced cucumber, red onion, kalamata olives, salt, pepper, lemon juice, fresh dill, and fresh parsley in a bowl. Toss well to combine all ingredients. Place the salsa in the fridge to chill while you prepare the other components.
  2. Make the Coconut Tzatziki: In a separate bowl, mix the coconut yogurt with diced cucumber, fresh dill, garlic powder, a pinch of salt, and lemon juice. Stir well and chill in the fridge alongside the salsa.
  3. Cook the Ground Chicken: Heat olive oil in a pan over medium heat. Add the ground chicken and crumble it using a spatula. Season with garlic powder, onion powder, dried oregano, dried dill, fresh parsley, salt, pepper, and lemon juice. Stir continuously until the chicken is cooked through and the seasonings are fully incorporated.
  4. Assemble the Bowls: Divide rice or cauliflower rice evenly among four bowls. Top each with a generous portion of the cooked chicken. Spoon the chilled Greek salsa over the chicken, and finish with a large dollop of the coconut tzatziki. Serve immediately while fresh and flavorful.

Notes

  • For a low-carb option, serve with cauliflower rice instead of traditional rice.
  • Omit pepper in the chicken seasoning to make this recipe AIP (Autoimmune Protocol) compliant.
  • Use canned coconut yogurt if fresh is unavailable, but choose a brand without added sugars.
