These healthy date candy bars are a delicious treat that combines the natural sweetness of dates with creamy peanut butter, crunchy pretzels, and a decadent dark chocolate coating. They are easy to make and perfect for satisfying your sweet tooth!

Ingredients

Scale

For the Filling:

  • 8 large soft medjool dates
  • 1/2 cup creamy peanut butter
  • 2 Tablespoons pure maple syrup (optional)
  • 1/4 cup crushed pretzels

For Assembly:

  • 20 whole pretzels
  • 1 cup dark chocolate chips
  • 1 1/2 Tablespoons coconut oil

Instructions

  1. Prepare the Date Filling: If your dates aren’t soft, soak them in water for 10 minutes. Drain and add dates, peanut butter, and maple syrup to a food processor. Mix until a gooey filling forms. Fold in crushed pretzels.
  2. Assemble the Bars: Lay out whole pretzels. Top each with a spoonful of filling, shaping into small bars. Freeze for 10-15 minutes.
  3. Melt the Chocolate: Combine chocolate chips and coconut oil. Melt using a double boiler or microwave, stirring frequently.
  4. Coat the Bars: Dip each bar in melted chocolate, ensuring full coverage. Place on parchment paper. Drizzle with extra chocolate if desired.
  5. Set and Enjoy: Freeze bars for an hour to allow the chocolate to harden. Serve and enjoy!

Notes

  • You can customize these bars by adding chopped nuts or dried fruit to the filling.
  • Store leftover bars in an airtight container in the refrigerator for up to a week.
