- Cook the pasta: Bring a large pot of salted water to a boil. Add the thin spaghetti and cook according to the package directions until al dente. While the pasta cooks, move on to preparing the sauce.
- Make the sauce: Heat a nonstick skillet over medium heat and add 2 teaspoons olive oil. Sauté 1 teaspoon dried oregano and 1 minced garlic clove for about 1 minute, until the garlic is fragrant and tender. Add 3 cups chopped seeded plum tomatoes, 1/2 cup sliced green onions, 2 tablespoons minced fresh parsley, 2 tablespoons minced fresh basil, and 2 tablespoons lemon juice. Cook and stir for 2 minutes, until the mixture is heated through. Remove the skillet from the heat.
- Finish the spaghetti: Drain the cooked spaghetti thoroughly, then add it to the skillet with the tomato and herb sauce. Add 3/4 cup crumbled feta cheese, 1/2 teaspoon salt, and 1/8 teaspoon black pepper. Toss gently to combine all ingredients well. Transfer to a serving dish and sprinkle the remaining 1/4 cup crumbled feta cheese and remaining 2 tablespoons minced fresh parsley on top as garnish.
