Churro Dough:
- 1 cup water
- ½ cup unsalted butter (115 grams)
- 1 tablespoon granulated sugar
- 1 tablespoon light brown sugar, packed
- ¼ teaspoon salt
- 1 cup gluten-free flour (140 grams, Cup4Cup recommended)
- 1 tablespoon cornstarch
- ¼ teaspoon xanthan gum (if needed)
- ½ teaspoon vanilla extract
- 3 large eggs, room temperature
Coating:
- ½ cup granulated sugar (100 grams)
- 2 teaspoons ground cinnamon
- Preheat the oven: Preheat the oven to 400 degrees F.
- Prepare baking sheet: Line a large baking sheet with parchment paper and spray with non-stick baking spray. Set aside.
- Make the dough: In a saucepan, combine water, butter, sugars, and salt. Bring to a boil, then stir in flour, cornstarch, and xanthan gum until dough forms. Remove from heat and let cool slightly.
- Add eggs: Stir in eggs one at a time until fully combined.
- Pipe the churros: Fill an icing bag with dough and pipe churros onto the prepared baking sheet.
- Bake: Bake for 17-18 minutes until lightly browned.
- Coat with cinnamon sugar: Roll the baked churros in a cinnamon sugar mixture until fully coated.
