Pasta:

  • 225g linguine or fettuccine

Steak:

  • 300g sirloin steak (or ribeye/New York strip)

Garlic Butter Sauce:

  • 4 cloves garlic, minced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons grated Parmesan (optional)
  • 1/2 cup reserved pasta water

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta until al dente, about 8–10 minutes. Reserve 1/2 cup pasta water, then drain and set aside.
  2. Sear the Steak: Pat the steak dry and season both sides with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Sear the steak for 3–4 minutes per side, or until desired doneness. Remove and let rest for 5–10 minutes.
  3. Prepare the Garlic Butter Sauce: Reduce heat to medium. In the same pan, melt butter and add the minced garlic. Sauté for 1–2 minutes until fragrant and golden, then stir in red pepper flakes.
  4. Combine Pasta and Sauce: Add the cooked pasta to the pan and toss in the garlic butter sauce, using reserved pasta water to loosen the sauce if needed.
  5. Slice the Steak: Slice the rested steak thinly against the grain.
  6. Assemble: Plate the pasta and top with sliced steak. Garnish with chopped parsley and Parmesan if desired.
  7. Serve: Serve immediately while hot.
