Pasta and Proteins
- 12 oz cheese tortellini
- 1 lb chicken breast, cut into cubes
Vegetables
- 2 cups fresh broccoli florets
Sauce
- 3 cloves garlic, minced
- 2 tbsp butter
- 2 tbsp olive oil
- 1 1/2 cups heavy cream
- 3/4 cup freshly grated Parmesan cheese
- Salt, to taste
- Black pepper, to taste
- Cook Pasta: Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package directions until al dente, about 3-5 minutes. Reserve 1 cup of pasta water before draining and set aside the tortellini.
- Prepare Broccoli: Steam the broccoli florets for 3-4 minutes until they are bright green and crisp-tender. Immediately plunge them into ice water to stop the cooking process, then drain and set aside.
- Sear Chicken: Season the chicken cubes with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear until golden brown on all sides and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
- Make Sauce: In the same skillet, reduce heat to medium and melt butter. Add minced garlic and sauté for 1 minute until fragrant but not browned. Slowly pour in the heavy cream while whisking continuously to combine.
- Add Cheese: Remove the skillet from heat and gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy. Season with salt and pepper to taste. If the sauce becomes too thick, gradually add the reserved pasta water to loosen it.
- Combine Everything: Return the cooked chicken to the skillet, then add the cooked tortellini and steamed broccoli. Gently toss all the ingredients together until well coated with the sauce. Serve immediately with extra grated Parmesan cheese on top if desired.
Notes
- Reserve pasta water to adjust sauce consistency as needed.
- Do not overcook broccoli to maintain texture and color.
- Use freshly grated Parmesan for best flavor and smooth melting.
- This dish can be prepared with store-bought cooked chicken strips to save time.
- For a lighter version, substitute heavy cream with half-and-half or milk, but sauce may be less rich.
