  • 2 Tablespoons unsalted butter
  • 4 cloves garlic, minced

Instructions

  1. Prepare the Steak: Cut 1 1/2 pounds sirloin steak into bite-sized pieces and pat them very dry with paper towels to ensure a good sear.
  2. Heat the Skillet: Heat a large skillet, preferably cast iron, over high heat. Add 1 tablespoon of olive oil and let it get very hot.
  3. Season the Steak: Generously season the steak pieces with 1/2 teaspoon salt and 1/2 teaspoon black pepper.
  4. Sear the Steak: Add steak to the hot pan in a single layer. Do not stir; let it cook undisturbed for at least 2 minutes to develop a golden brown crust.
  5. Flip and Cook: Flip the steak pieces and cook for another 2 minutes until golden brown. If needed, cook in batches to avoid crowding.
  6. Remove Steak from Pan: Transfer the seared steak bites to a plate and set aside.
  7. Make Garlic Butter: Reduce heat to medium and add 2 tablespoons of unsalted butter to the same pan.
  8. Sauté Garlic: Once the butter has melted, add the minced garlic and red pepper flakes if using. Stir constantly and cook for about 30 seconds until fragrant, being careful not to burn the garlic.
  9. Combine Steak and Garlic Butter: Pour the garlic butter over the steak bites in the plate and toss well to coat evenly.
