For Caramelized French Onions:
- 2 medium White Onions (thinly sliced)
- 1 cup of Beef Broth
- 2 oz of Bourbon
- 1 tbsp Brown Sugar
- 1 tbsp Chopped Rosemary
- 8 Garlic Cloves minced
- Salt & Pepper to taste
- 2 tbsp of Beef Tallow
- 3 tbsp of Gruyere grated
- 1 tbsp of Panko Crumbs
- 1 tbsp of Melted Butter
- 1 tbsp of Parmesan grated
For Steak Pinwheels:
- 2–3 Skirt Steaks
- 1 tbsp Kosher Salt
- 1 tbsp Black Pepper
- 1 tbsp Garlic Powder
- Canola Oil (as needed)
- Chopped Parsley (for garnish)
- 6–8 slices Swiss Cheese
- Preheat the grill: Preheat your grill to medium-high heat (about 350F) for direct cooking. Add a cast iron skillet to the grill 2 minutes before cooking.
- Caramelize the onions: Melt beef tallow in the skillet and cook the thinly sliced white onions with salt and pepper until caramelized, about 45-60 minutes. Add garlic and rosemary, then deglaze with bourbon and beef broth, and add brown sugar.
- Prepare the steak: Flatten skirt steak, season with salt, pepper, and garlic. Layer with Swiss cheese and caramelized onions, roll up, secure with twine, and slice into pinwheels.
- Grill the pinwheels: Sear each side for 1 minute, then cook over indirect heat until internal temperature reaches 125F, about 10-15 minutes.
- Finish and serve: Rest the steaks, add cheese crust, caramelize, slice, and serve garnished with chopped parsley.
