Ingredients

Scale

Chicken Mixture

  • 4 cups cooked, shredded chicken (about 34 whole breasts, or one large rotisserie chicken)
  • 1 cup sour cream
  • 1 (10.5-ounce) can condensed cream of chicken soup
  • 1 (10.5-ounce) can French onion soup
  • 1 ¼ cup shredded Swiss cheese (or Gruyère cheese)
  • 1 envelope onion soup mix (about 3 tablespoons)

Topping

  • 2 ½ cups French-fried onions (about one 6-ounce package)

Instructions

  1. Prepare the oven and dish. Preheat your oven to 350°F (175°C). Lightly spray a 9 x 13-inch baking dish with nonstick cooking spray to prevent sticking and set aside.
  2. Mix the chicken casserole filling. In a large bowl, combine the cooked, shredded chicken with sour cream, condensed cream of chicken soup, French onion soup, shredded Swiss cheese, and the onion soup mix. Stir all ingredients thoroughly until evenly mixed.
  3. Spread the mixture. Transfer and evenly spread the chicken mixture into the prepared baking dish, smoothing the surface.
  4. Bake the casserole. Place the dish uncovered in the preheated oven and bake for 25-30 minutes, until the casserole is heated through and bubbling at the edges.
  5. Add the crispy onion topping. Remove the casserole from the oven and sprinkle the French-fried onions evenly on top. Return to the oven and bake for an additional 5-10 minutes to crisp the onions.
  6. Rest and serve. Let the casserole stand for 5-10 minutes after baking to set before serving. This allows flavors to meld and makes serving easier.

Notes

  • You can use leftover cooked chicken or a pre-cooked rotisserie chicken for convenience.
  • Gruyère cheese is an excellent substitute for Swiss cheese if you prefer a slightly nuttier flavor.
  • If you like a thicker sauce, reduce the amount of French onion soup to ½ cup.
  • For extra crispiness, add the French-fried onions just before serving instead of baking them.
  • This casserole pairs well with steamed vegetables or a fresh green salad.
