Enchiladas Suizas are a delicious Mexican casserole made with tender shredded chicken, green enchilada sauce, and creamy sour cream, all wrapped in corn tortillas and baked with melted cheese for a comforting and flavorful meal.

Ingredients

Scale

Filling and Sauce

  • 2 cups cooked and shredded chicken (rotisserie works great)
  • 1/2 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup green enchilada sauce (or salsa verde)
  • 1/2 cup chicken broth
  • Salt and pepper to taste

Tortillas and Assembly

  • 12 corn tortillas
  • 2 tablespoons olive oil
  • 1 cup shredded cheese (Monterey Jack or Mexican blend)

Sour Cream Sauce and Garnish

  • 1 cup sour cream
  • 1 tablespoon green enchilada sauce
  • 1 tablespoon fresh cilantro, chopped

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the enchiladas.
  2. Sauté Aromatics: Heat the olive oil in a skillet over medium heat. Add the chopped onions and minced garlic, sautéing them until softened, about 3-4 minutes, to build flavor.
  3. Prepare Chicken Mixture: Add the shredded chicken, chicken broth, and green enchilada sauce into the skillet. Stir everything together and let it simmer for 5 minutes. Season with salt and pepper to taste.
  4. Soften Tortillas: In a separate pan, lightly fry each corn tortilla in a bit of oil for about 30 seconds per side. This softens the tortillas and helps prevent sogginess in the final dish.
  5. Mix Sour Cream Sauce: Combine the sour cream with 1 tablespoon of green enchilada sauce in a small bowl and set aside for topping later.
  6. Assemble Enchiladas: Spread a small amount of the chicken mixture at the bottom of a baking dish to prevent sticking. Fill each softened tortilla with the chicken mixture, roll it up, and place seam-side down in the dish.
  7. Add Sauce and Cheese: Pour the remaining chicken mixture evenly over the rolled tortillas in the dish, then sprinkle shredded cheese on top.
  8. Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden brown.
  9. Garnish and Serve: Remove from the oven and top the enchiladas with the sour cream sauce and fresh chopped cilantro before serving.

Notes

  • Using rotisserie chicken cuts down on prep time and adds great flavor.
  • Lightly frying tortillas helps retain texture and prevents them from getting soggy.
  • You can substitute Monterey Jack cheese with a Mexican cheese blend for more authentic flavor.
  • Adjust the level of green enchilada sauce in the sour cream topping to your taste preference.
  • Serve with additional chopped cilantro and lime wedges for added freshness.
