Instructions

  1. Slice the cucumber: Start by slicing the cucumber into thick, even rounds, approximately half an inch thick. Lay the rounds on a clean surface or plate without overlapping to maintain their shape and make assembly easier.
  2. Marinate the feta: In a small bowl, gently combine the feta cheese cubes with extra virgin olive oil, finely chopped fresh parsley, and dried oregano. Toss lightly so the feta is evenly coated, enhancing its flavor and richness.
  3. Assemble the skewers: Take one cucumber slice, place a marinated feta cube on top, then add one Kalamata olive. Secure the stack by inserting a wooden toothpick or small skewer through the center. Repeat until all ingredients are used.
