  • 50 g Light Brown Sugar
  • 1 Egg (large, at room temperature)
  • 2 tsp Vanilla Extract
  • 130 g Plain Flour

Instructions

  1. Preheat the oven: Preheat the oven to 180°C (160 fan/ 350 °F/ Gas 4) and line a 20cm square baking tin with baking paper.
  2. Mix butter and sugar: In a large mixing bowl, beat together the melted butter and sugar until pale and fluffy.
  3. Add egg and vanilla: Mix in the egg and vanilla extract.
  4. Combine dry ingredients: Fold in the flour, baking powder, and salt.
  5. Stir in mix-ins: Add the dried cranberries and white chocolate chips to the batter.
