Ingredients

Scale

Filling

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/2 cup salsa
  • 1/2 cup water
  • 1/2 cup corn (fresh, frozen, or canned)
  • 1/2 cup black beans, drained
  • 1 1/2 cups shredded cheddar cheese

Dough

  • 2 cans crescent rolls
  • 1 egg
  • 1 tablespoon water (for egg wash)

Toppings and Garnishes

  • Your favorite taco fixings (sour cream thinned with a little water, sliced tomatoes, green onions, black olives, corn, shredded lettuce, chopped tomatoes, salsa, guacamole)

Instructions

  1. Cook the ground beef: In a large skillet over medium-high heat, cook the ground beef until it is no longer pink. Drain thoroughly using a colander to prevent excess grease in the taco ring.
  2. Add seasoning and simmer: Return the beef to the skillet and add the taco seasoning, 1/2 cup water, salsa, corn, and drained black beans. Simmer over medium heat until the liquid has mostly evaporated, stirring occasionally.
  3. Cool the mixture: Transfer the cooked taco meat mixture to the refrigerator and chill for 20-30 minutes. This step ensures the crescent roll dough won’t become doughy or gummy during baking.
  4. Preheat oven and prepare baking sheet: Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper and place a small bowl (3-4 inches diameter) in the center as a guide for shaping.
  5. Arrange crescent rolls: Separate the crescent roll triangles and arrange them in a circular pattern on the baking sheet around the bowl. Overlap the short ends of each triangle to form an inner ring while the pointed ends stick out around the outside.
  6. Combine cheese and meat: Stir the shredded cheddar cheese into the cooled taco meat mixture until well incorporated.
  7. Fill and fold the dough: Spoon the taco meat and cheese mixture onto the inner half of the crescent roll ring. Then, gently pull each outer dough triangle up and over the filling, tucking the point underneath the bottom layer of dough. It’s okay if some filling shows in between the strips. Reshape the ring gently if needed to form a perfect circle.
  8. Apply egg wash: Beat the egg with 1 tablespoon of water, and brush this egg wash over the entire crescent roll dough to give it a beautiful golden color during baking.
  9. Bake the taco ring: Bake in the preheated oven for about 25 minutes or until the dough is fully cooked and golden brown. If the ring starts to brown too quickly, cover loosely with foil for the last few minutes. Allow the ring to cool for 5-10 minutes before serving.
  10. Garnish and serve: Drizzle sour cream thinned with a little water over the top. Garnish with sliced tomatoes, green onions, black olives, and corn. Fill the center of the ring with shredded lettuce, chopped tomatoes, or serve with salsa and guacamole for dipping. Serve with your favorite taco toppings to customize each bite.

Notes

  • Drain ground beef very well to avoid a soggy taco ring.
  • Chilling the meat mixture before assembling helps prevent the crescent dough from becoming gummy.
  • Using a parchment-lined baking sheet makes cleanup easier and prevents sticking.
  • Egg wash gives the crescent dough a nice golden color and shine.
  • Feel free to add or substitute vegetables or beans to suit your preferences.
