Vegetables:
- 2 tablespoons avocado oil
- 1/2 large yellow onion, chopped
- 1 green bell pepper, chopped
- 5 cups cubed sweet potatoes
- 3 garlic cloves
Sausage:
Egg Mixture:
- 10 eggs
- 1/2 cup milk (plant-based milk can be substituted)
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup grated mozzarella cheese
- Preheat Oven and Prepare the Baking Dish – Preheat your oven to 350°F (175°C). While the oven is heating, chop the vegetables and grease a 9×13-inch casserole dish.
- Cook the Vegetables – In a Dutch oven, sauté onion, pepper, sweet potato, and garlic. Spread in the baking dish.
- Cook the Sausage – Cook turkey sausage in the same pot until done. Add to the vegetables.
- Prepare the Egg Mixture – Whisk eggs, milk, thyme, salt, pepper, and cheese. Pour over the vegetables and sausage.
- Combine and Bake – Mix gently, bake for 40-45 minutes until set. Cover with foil if browning too much.
