Graham Cracker Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted

Cheesecake Filling:

  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup heavy cream, whipped to soft peaks
  • Juice and zest of 2 lemons

Garnish:

  • Whipped cream
  • Additional lemon zest or lemon slices

Instructions

  1. Making the Crust – In a medium bowl, mix graham cracker crumbs and melted butter until well combined. Press into the bottom of a 9-inch springform pan, and chill.
  2. Making the Cheesecake Filling – Beat cream cheese until smooth, add sugar, then fold in whipped cream, lemon juice, and zest. Pour over crust.
  3. Refrigerate – Chill for at least 6 hours or overnight.
  4. Garnishing and Serving – Loosen edges, remove from pan, garnish with whipped cream and lemon zest before slicing and serving.
