Ingredients

Scale

Vegetables

  • 2 1/2 cups green beans, trimmed and cut into 1-inch pieces

Protein

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch chunks

Oils and Sauces

  • 1 tablespoon vegetable oil
  • 1 teaspoon vegetable oil
  • 1/4 cup low-sodium chicken broth (or water)
  • 1/4 cup soy sauce

Flavorings

  • 2 teaspoons minced garlic
  • 3 tablespoons honey
  • 2 teaspoons cornstarch
  • Salt and pepper, to taste

Instructions

  1. Cook the Green Beans: Heat 1 teaspoon of vegetable oil in a large pan over medium heat. Add the green beans and sauté for 3 to 4 minutes until tender but still crisp. Remove the green beans from the pan, place them onto a plate, and cover to keep warm.
  2. Cook the Chicken: Wipe the pan clean with a paper towel and increase the heat to high. Add the remaining tablespoon of oil. Season the chicken chunks with salt and pepper and arrange them in a single layer in the pan. Cook the chicken in batches if necessary. Sear each piece for 3 to 4 minutes on each side until golden brown and fully cooked. Add minced garlic and cook for an additional 30 seconds to infuse flavor.
  3. Combine Chicken and Green Beans: Return the cooked green beans to the pan with the chicken. Stir and cook for 2 more minutes until the green beans are warmed through and evenly mixed with the chicken.
  4. Prepare the Sauce: In a small bowl, whisk together chicken broth, honey, and soy sauce until combined. Separately, dissolve the cornstarch in a tablespoon of cold water until smooth.
  5. Finish the Dish: Pour the prepared soy sauce mixture over the chicken and green beans in the pan. Stir for 30 seconds to coat everything evenly. Whisk the cornstarch mixture again and pour into the pan, then bring to a boil. Cook for 1 more minute, stirring continuously, until the sauce thickens slightly and clings to the chicken and vegetables.
  6. Serve: Serve hot immediately. Optionally, pair with steamed rice for a complete meal. Enjoy your savory chicken breast and green bean stir-fry!

Notes

  • Use low-sodium soy sauce to control salt content.
  • Adjust cooking time based on chicken piece size to prevent dryness.
  • For a gluten-free version, substitute soy sauce with tamari.
  • Feel free to add other vegetables such as bell peppers or mushrooms for variety.
  • Ensure the pan is hot enough before adding chicken to get a good sear.
