  • 1 (14 ounce) can fire-roasted diced tomatoes with juices
  • 3 (14 ounce) cans black beans, drained & rinsed
  • 1 (4 ounce) can diced green chilies with juices
  • 1/2 red bell pepper, chopped
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1 tablespoon lime juice
  • Salt & pepper to taste

Instructions

  1. Sauté Aromatics: Add the olive oil and chopped onion to a soup pot and sauté over medium heat for 5-7 minutes until the onions are softened and lightly browned, enhancing their flavor.
  2. Add Garlic and Liquids: Stir in the minced garlic and cook for another minute until fragrant. Then add the broth, fire-roasted diced tomatoes with juices, drained black beans, diced green chilies with juices, chopped red bell pepper, chili powder, smoked paprika, and ground cumin.
  3. Simmer the Soup: Increase heat to high and bring the soup to a boil. Once boiling, cover the pot with the lid slightly ajar, reduce heat to low, and let it simmer gently for 8-10 minutes to meld the flavors.
  4. Blend the Soup: Using an immersion blender (or regular blender in batches, allowing to cool slightly), blend most of the soup until smooth but still slightly chunky to maintain texture and heartiness.
  5. Season and Finish: Stir in the lime juice and season with salt and pepper to taste. Adjust the seasoning carefully, as the beans and broth can vary in saltiness.
  6. Serve: Ladle the soup into bowls and garnish with optional toppings such as chopped cilantro, sour cream, tortilla strips, or avocado slices as desired.
