These Korean Rice Balls, known as Jumeokbap, are a quick and easy snack or light meal that can be made in just 10 minutes. Made with a flavorful mixture of tuna, mayo, and seasonings, these rice balls are then coated in Korean seasoned seaweed flakes for a delicious and portable treat.

Rice Balls:

  • 1 cup cooked short grain rice (packed)

Tuna Mixture:

  • 1/3 cup canned tuna (strained of liquids)
  • 2 tbsp Japanese mayo (or sub with normal mayo)
  • 1/4 tsp salt
  • 1/2 tsp sesame oil
  • 1 tsp sesame seeds

Coating:

  • 1/2 cup Korean seasoned seaweed flakes

Instructions

  1. Prepare Rice: Reheat cooked rice in the microwave until hot. Let it cool.
  2. Make Tuna Mixture: In a bowl, mix tuna, sesame oil, sesame seeds, mayo, and salt.
  3. Combine Ingredients: Mix in the cooked rice until well combined.
  4. Shape Rice Balls: Wet hands, take rice, squeeze into balls.
  5. Coat with Seaweed: Roll balls in seasoned seaweed flakes until coated.

Notes

  • If using uncooked rice, you’ll need about 1/2 cup uncooked short grain rice to yield 1 cup cooked rice.
  • For a neat shape, use plastic gloves or wrap when shaping the balls.
