  • 1 cup warm water or warm milk

  • 7 tablespoons salted butter, at room temperature

Cinnamon Sugar Topping

  • 1/4 cup granulated sugar
  • 3 teaspoons cinnamon
  • 1/2 cup brown sugar

Glaze

  • 1 cup powdered sugar
  • 2 tablespoons cream cheese, at room temperature
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons water (plus more if needed to thin)

Instructions

  1. Prepare the dough: In the bowl of a stand mixer fitted with the dough hook, combine 2 1/2 cups flour, instant yeast, and kosher salt. Add the warm milk or water, honey, and 1 tablespoon of the butter. Knead on medium speed for 1-2 minutes, adding more flour as needed until the dough pulls away from the bowl and is smooth. Cover the dough and let it rise in a warm place for 30 minutes to 1 hour.
  2. Preheat and prepare baking sheet: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  3. Make cinnamon sugar: In a small bowl, combine the granulated sugar and 1 teaspoon cinnamon, setting aside your cinnamon sugar mixture.
  4. Roll and shape dough: On a floured surface, roll the risen dough into a rectangle about 1/4 inch thick, adding flour if the dough is sticky. Spread 4 tablespoons of softened butter evenly over the dough and sprinkle the cinnamon sugar mixture on top. Fold the dough in half and cut into 12 strips. Twist each strip and tie into a loose knot, then place the knots on the prepared baking sheet.
