For the salad:

  • 1 pound lean ground beef
  • 2 tablespoons taco seasoning (or 1 packet)
  • ¼ cup water
  • 1 head romaine lettuce, chopped into bite-sized pieces
  • ½ cup sliced black olives
  • 1 14-ounce can black beans, rinsed and drained
  • 1 cup cherry tomatoes, sliced
  • 1 cup shredded cheddar cheese
  • 10-ounce bag Nacho flavored Doritos, slightly crushed (save some for garnish)
  • ¼ cup green onions, thinly sliced
  • Cilantro, for garnish
  • 1 cup (8 oz) Catalina dressing

For garnish:

  • Sour cream

Instructions

  1. Brown the beef: In a skillet over medium-high heat, brown the beef, breaking it apart with a wooden spoon until no longer pink. Drain fat if necessary.
  2. Season the meat: Season with taco seasoning, add water, stir, and cook for 1 minute.
  3. Prepare the salad: In a large bowl, combine lettuce, taco meat, olives, black beans, cherry tomatoes, cheese, Doritos, and green onions.
  4. Add dressing: Pour the Catalina dressing over the salad and gently toss to combine.
