Instructions

  1. Prepare the Filling: In a saucepan, combine the diced Pirus apples, Demerara cane sugar, and ground cinnamon. Gently simmer the mixture over medium heat until the sugar dissolves and the apples soften slightly. Next, mix the cornstarch with a small amount of water to create a slurry, then add this to the saucepan, stirring continuously until the mixture thickens into a luscious apple filling.
  2. Form the Buns: Roll out the puff pastry slightly on a floured surface and cut into circles of uniform size. Place a spoonful of the warm apple mixture onto one pastry circle, then cover it with another circle. Seal the edges carefully first with your fingers, then press with a fork to ensure they are tightly closed. Optionally, create small vent cuts on the top of each bun to allow steam to escape during baking.
  3. Bake: Preheat your oven to 175°C if using a convection setting, or 180°C for a conventional oven.
