A refreshing and colorful California Pasta Salad that’s perfect for picnics, potlucks, or a simple weeknight dinner. This easy-to-make salad is loaded with rotini pasta, fresh vegetables, black olives, sharp cheddar cheese, and a zesty Italian dressing.

Pasta:

  • 12 oz rotini pasta (or your favorite pasta shape)

Salad:

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup bell pepper, chopped
  • 1/2 cup sharp cheddar cheese, cubed
  • 1/2 cup Italian salad dressing
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil. Cook pasta until al dente, then drain and rinse under cold water.
