A delightful recipe for Scandinavian Rosettes, crispy and delicate deep-fried pastries dusted with powdered sugar. Perfect for a sweet treat or special occasions.

Ingredients

Scale

Batter:

  • 2 eggs
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1 cup whole milk
  • 1 teaspoon vanilla (optional)

Additional:

  • Oil for frying
  • Powdered sugar

Instructions

  1. Prepare the Batter: In a bowl, combine eggs, granulated sugar, and salt; beat well.
  2. Mix the Ingredients: Add flour, milk, and vanilla (if using); beat until smooth.
  3. Heat the Rosette Iron: Heat a rosette iron in 2-3 inches of oil (365 – 375°F).
  4. Dip and Fry: Dip the hot rosette iron into the batter, ensuring it only comes three-quarters of the way up the side of the iron. Fry the rosette in the hot oil until golden.
  5. Drain and Cool: Lift the rosette out, let excess oil drain off, then place on paper toweling on a wire rack to cool.
  6. Repeat: Reheat the iron, drain, and repeat the frying process.
  7. Dust with Sugar: Sift powdered sugar over the cooled rosettes before serving.

Notes

  • Make sure the rosette iron is hot enough to ensure crispy rosettes.
  • Be cautious when frying to prevent burns from hot oil.
