Ingredients

Scale

Main Ingredients

  • 1 pound ground turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 8 ounces egg noodles
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Sauté Onions and Garlic: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until translucent. Add the minced garlic and cook for an additional minute to release its aroma.
  2. Cook Turkey: Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until browned and fully cooked through, about 5-7 minutes.
  3. Add Mushrooms and Spices: Stir in the sliced mushrooms, paprika, salt, and black pepper. Cook for another 5 minutes until the mushrooms soften and release their moisture.
  4. Make Sauce Base: In a small bowl, whisk together the flour and chicken broth until smooth. Pour this mixture into the skillet with the turkey and vegetables. Stir well and bring to a simmer, cooking for about 3-4 minutes until the sauce slightly thickens.
  5. Incorporate Sour Cream: Reduce the heat to low and stir in the sour cream gradually until fully combined. Cook for an additional 2 minutes, making sure the mixture does not boil to prevent curdling.
  6. Cook Noodles: Meanwhile, cook the egg noodles according to the package instructions. Drain well and set aside.
  7. Serve: Serve the creamy turkey stroganoff over the cooked egg noodles and garnish with chopped fresh parsley for a burst of color and flavor.

Notes

  • For a healthier twist, use low-fat sour cream.
  • To make it gluten-free, substitute all-purpose flour with gluten-free flour and use gluten-free noodles.
  • Don’t boil after adding sour cream to avoid the sauce breaking.
  • Ground turkey can be replaced with ground chicken if preferred.
  • Fresh parsley adds a fresh herbal note but can be omitted if unavailable.
