Dressing:

  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1/2 cup crumbled feta cheese
  • 2 teaspoons dried oregano
  • 2 cloves garlic, minced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Salad:

  • 1 large cucumber, diced
  • 2 cups grape tomatoes, sliced
  • 1/2 red onion, diced
  • 2 cups baby spinach, chopped

Instructions

  1. Cook the Pasta: Prepare the gluten-free pasta according to package instructions. Rinse with cool water and toss with olive oil. Chill in the refrigerator.
