Ingredients

Scale

Meat and Vegetables

  • 1 lb ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups potatoes or sweet potatoes, diced

Canned and Packaged Goods

  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 4 cups beef broth

Spices and Seasonings

  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Garnish

  • Fresh cilantro for garnish

Instructions

  1. Brown the Beef: In a skillet over medium heat, cook the ground beef until browned evenly. This helps to develop rich flavors. Once cooked, drain the excess fat to reduce greasiness.
  2. Sauté Onion and Garlic: Add the chopped onion and minced garlic to the skillet with the beef. Sauté until the onions are softened and fragrant, about 3-5 minutes, enhancing the stew’s aromatic base.
  3. Transfer to Crockpot: Pour the beef mixture into the crockpot. Add diced potatoes, canned diced tomatoes, kidney beans, corn, pinto beans, beef broth, chili powder, cumin, salt, and pepper. Stir everything together to combine flavors well.
  4. Cook Slowly: Cover the crockpot and cook on low heat for 6-7 hours or on high heat for 3-4 hours. The long cook time allows the potatoes to become tender and the flavors to meld perfectly.
  5. Garnish and Serve: Before serving, garnish the stew with fresh cilantro. Serve hot alongside cornbread or crusty bread to soak up the delicious broth.

Notes

  • You can substitute sweet potatoes for regular potatoes for a sweeter twist.
  • Adjust chili powder based on your preferred spice level.
  • For a thicker stew, mash some of the potatoes before serving.
  • Leftovers store well in the refrigerator for up to 3 days or freeze for up to 3 months.
  • Adding a splash of lime juice before serving can brighten the flavors.
