  • 34 lb chuck roast
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste
  • 2 tablespoons butter

Au Jus Sauce and Broth

  • 1 onion, sliced
  • 2 tablespoons minced garlic
  • 2 tablespoons Worcestershire sauce
  • 12 oz beer (lager or ale recommended)
  • 1 package Au Jus mix
  • 1 1/2 cups beef broth

Sandwich Assembly

  • Sub rolls
  • Provolone cheese slices

Instructions

  1. Season the Chuck Roast: Generously season the chuck roast on all sides with salt, black pepper, and garlic powder to enhance flavor.
  2. Sear the Roast: Melt butter in a large skillet over medium-high heat and sear the chuck roast on all sides until nicely browned to lock in juices and build flavor.
  3. Add Roast to Crockpot: Place the seared chuck roast into the crockpot and pour 1 1/2 cups of beef broth over it.
  4. Prepare Au Jus Mixture: In the same skillet, add sliced onions, minced garlic, Worcestershire sauce, beer, and the Au Jus packet. Stir well and let the mixture simmer briefly to combine the flavors.
  5. Cook in Crockpot: Pour this onion and au jus mixture over the chuck roast in the crockpot. Cover and cook on low for 6-8 hours until the meat is tender and shreds easily.
  6. Shred Meat: Remove the chuck roast from the crockpot, shred the meat with two forks, and discard any excess fat. Return shredded meat to the sauce in the crockpot to keep warm.
  7. Assemble Sandwiches: Pile the shredded beef onto sub rolls, top each with provolone cheese slices.
  8. Melt Cheese: Place the assembled sandwiches in the oven at 350°F (175°C) for about 3-5 minutes just until the provolone cheese melts perfectly.
  9. Serve and Enjoy: Serve the sandwiches hot with a side of the au jus sauce for dipping. Enjoy your hearty French Dip Sandwiches!

Notes

  • For best results, use a good quality chuck roast with some marbling for tenderness and flavor.
  • Choose a flavorful beer like an ale or lager to add depth to the au jus sauce.
  • You can substitute sub rolls with hoagie or French rolls based on your preference.
  • Leftover shredded beef and au jus can be refrigerated for up to 3 days or frozen for up to 3 months.
  • Be careful not to overcook the roast to avoid dry meat; slow cooking on low ensures tenderness.
  • If you want extra crispy sandwiches, toast the rolls before assembling.
