Shrimp Ball Mixture
- 1 lb raw shrimp, peeled and deveined
- ½ cup panko breadcrumbs
- 1 beaten egg
- ¼ cup finely chopped green onions
- 2 cloves minced garlic
- 1 tablespoon grated fresh ginger
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ cup chopped cilantro
- 1 tablespoon cornstarch (for binding)
For Frying
- Vegetable oil (enough for frying)
- Prepare Shrimp: Roughly chop the raw shrimp into small pieces or pulse briefly in a food processor until the shrimp reaches a finer texture. This will help the shrimp balls bind well and have a smooth consistency.
- Mix Ingredients: In a large mixing bowl, combine the chopped shrimp, panko breadcrumbs, beaten egg, finely chopped green onions, minced garlic, grated fresh ginger, soy sauce, sesame oil, salt, black pepper, and chopped cilantro. Add the cornstarch to the mixture if needed to improve binding and mix everything thoroughly until well combined.
- Form Balls: Wet your hands slightly to prevent sticking. Take portions of the mixture and roll them into 1 to 1.5 inch diameter balls. You should be able to form about 20 to 25 shrimp balls in total from the mixture.
- Fry: Heat vegetable oil in a large pan over medium-high heat. Once hot, carefully add the shrimp balls in batches, ensuring not to overcrowd the pan. Fry each batch for 3 to 4 minutes per side, or until they are golden brown and crispy on the outside. Remove and drain on paper towels before serving.
Notes
- For a finer texture, pulse the shrimp more, but avoid turning it into a paste.
- Adjust seasoning to taste before forming the balls.
- Ensure the oil is hot enough to avoid soggy shrimp balls.
- Serve with a dipping sauce like sweet chili or soy sauce for added flavor.
- Leftover shrimp balls can be refrigerated and reheated by pan-frying or baking for crispiness.
