Tofu Mixture
- 1 (16 oz) block super firm tofu, patted dry
- 1 tbsp cornstarch
- 1 tsp smoked paprika
- 1/2 tsp ground coriander
- 1/2 tsp garlic powder
- 1 tbsp tamari
- 1 tbsp avocado oil
Roasted Cabbage Mixture
- 3 cups cabbage, finely shredded
- 1/2 medium red onion, thinly sliced
- 1 tsp garlic powder
- 1/2 tsp ground coriander
- 1/2 tsp dry thyme
- 1 tbsp avocado oil
- Kosher salt, to taste
Pistachio Za’atar Herb Mix
- 1/4 cup pistachios, finely chopped
- 1/3 cup fresh parsley, finely minced
- 2 tbsp fresh mint, finely minced
- 1 clove garlic, grated
- 2 tsp za’atar
- 1/2 tsp sumac (optional)
- Zest and juice of 1 lemon
- 1 tbsp maple syrup
- 1 tbsp extra virgin olive oil (optional)
- Generous pinch of kosher salt
To Serve

- Prepare the Tofu: Preheat your oven to 425°F (220°C). Using a box grater placed over a parchment-lined baking tray, grate the super firm tofu over the largest holes to create shredded tofu. Sprinkle the cornstarch, smoked paprika, ground coriander, garlic powder, tamari, and avocado oil over the shredded tofu. Toss everything together until the tofu is evenly coated, then spread it out in an even layer on the baking tray.
- Prepare the Cabbage: On a separate baking tray, combine the finely shredded cabbage, thinly sliced red onion, garlic powder, ground coriander, dry thyme, a generous pinch of kosher salt, and avocado oil. Toss everything until well coated, then spread the cabbage mixture out in an even layer on the tray.
- Bake Tofu and Cabbage: Place the tofu tray on the middle rack of the oven and the cabbage tray on the bottom rack. Bake for 10 minutes, then remove both trays and toss the ingredients to ensure even cooking. Spread them back into an even layer, switch the trays to opposite racks, and bake for an additional 8 to 10 minutes. The tofu should turn golden and crispy, while the cabbage should begin to crisp around the edges.
- Make the Za’atar Pistachio Herb Mixture: While the tofu and cabbage bake, combine the finely chopped pistachios, minced fresh parsley, fresh mint, grated garlic, za’atar, optional sumac, lemon zest and juice, maple syrup, extra virgin olive oil (if using), and a generous pinch of kosher salt in a bowl. Stir thoroughly until the mixture is well combined and aromatic.
- Combine Cabbage and Herb Mix: Once the tofu and cabbage are done baking, transfer the roasted cabbage directly onto the tofu baking tray. Add the za’atar pistachio herb mixture on top. Using tongs, toss everything together gently until the tofu, cabbage, and herb mix are evenly combined for maximum flavor distribution.
- Assemble the Wraps: Warm the pitas or tortillas according to package instructions. Spread 2 to 3 tablespoons of hummus onto each pita, top with chopped lettuce, and then spoon generous amounts of the tofu and cabbage mixture over the top. Fold the pita over to form a wrap and serve immediately for a delicious, flavorful meal.
