  • 1/3 cup maple syrup
  • 1 teaspoon pure vanilla extract
  • 3 tablespoons unsweetened cacao/cocoa powder
  • 1/8 teaspoon salt
  • 2 cups crispy puffed quinoa

Instructions

  1. Prepare the Batter: Line a baking sheet with parchment paper. Melt coconut butter, sunflower seed butter, maple syrup, and vanilla in the microwave. Whisk until smooth. Add cacao powder and salt. Fold in puffed quinoa.
  2. Shape the Cookies: Scoop the batter onto the baking sheet. Flatten and shape into rounds. Chill to harden.
  3. Chill and Store: Freeze the cookies on the sheet for about 30 minutes until set. Store in an airtight container in the freezer.
