  • 1 tbsp lemon juice
  • 3 tbsp fresh parsley (finely chopped)
  • ½ tsp salt (adjust to taste; Parmesan is salty)
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • ¼ tsp baking soda
  • Oil (for frying)

Instructions

  1. Mash the chickpeas: Place the chickpeas in a large bowl and mash them with a fork or potato masher until crumbly. The texture should be coarse, with small pieces remaining but no whole chickpeas.
  2. Mix the batter: Add the grated onion, pressed garlic, egg, Parmesan cheese, flour, lemon juice, salt, black pepper, paprika, smoked paprika, ground cumin, baking soda, and parsley to the mashed chickpeas. Mix well until fully combined. The mixture should be soft but hold together.
  3. Rest the mixture: Let the mixture rest for 10 minutes. This allows the flour to hydrate, improving the texture and binding properties of the batter.
  4. Cook the patties: Heat a thin layer of oil in a skillet over medium heat. Using a spoon, scoop portions of the mixture and slide them into the pan with the help of a second spoon, lightly shaping them as needed. Cook each side for 3–4 minutes until golden brown and cooked through.
