Instructions

  1. Cook the chicken: Place the chicken breasts, taco seasoning, and salsa together in a slow cooker. Cook on low for 4-5 hours or on high for 2-3 hours until the chicken is fully cooked and tender.
  2. Shred the chicken: Using two forks, shred the cooked chicken directly in the slow cooker. Add cream cheese and chopped cilantro to the shredded chicken.
  3. Mix the filling: Stir the chicken, cream cheese, and cilantro together until well combined and creamy.
  4. Prepare tortillas: Heat a couple tablespoons of cooking oil in a skillet over medium-high heat. Place one corn tortilla into the hot oil and let it crisp up, then flip it to crisp the other side, adding more oil if necessary.
  5. Assemble and crisp tacos: On one side of the tortilla, add a couple tablespoons of shredded cheese and a couple tablespoons of the shredded chicken mixture. Fold the tortilla over and cook for about 30 seconds or until crispy. Flip and fry the other side until the desired crispiness is achieved.
