Gnocchi:

  • 18 oz gnocchi (or another short pasta shape)

Sauce:

  • 1/2 red onion (diced)
  • 3 cloves garlic
  • 1 pinch red pepper or chili flakes (or to taste)
  • 2 tsp mixed Italian seasoning
  • 1/3 cup sundried tomatoes (chopped, see notes)
  • 2 tbsp tomato paste (puree)
  • 2/3 cup vegetable broth
  • 2/3 cup heavy (double) cream
  • 3/4 cup parmesan style cheese (grated)
  • 1 small bunch basil (chopped)
  • 12 handfuls baby spinach (chopped)

Instructions

  1. Saute Aromatics: In a large, deep saucepan, saute onions until soft. Add garlic, chili flakes, Italian seasoning, salt, pepper, and sundried tomatoes. Cook until fragrant.
  2. Add Tomato Paste: Stir in tomato paste and cook for a couple of minutes. Pour in vegetable broth and simmer.
  3. Crisp Gnocchi: Pan fry gnocchi in olive oil until golden on all sides.
  4. Finish Sauce: Add cream and cheese to the saucepan. Simmer until cheese melts. Stir in spinach and basil.
  5. Combine and Serve: Toss gnocchi in sauce, plate, and serve hot.

Notes

  • For the sundried tomatoes, you can use either oil-packed or dry-packed ones. If using dry-packed, rehydrate them in hot water before chopping.
